The most recent of Santiago's migrant cuisines. Found above all in grocers and neighborhood spots in the western and northern sectors, with pork, rice and plantain dishes.
Haitian migration reached Chile after the 2010 earthquake and peaked between 2016 and 2018, with a community settled in Quilicura, Estación Central, Independencia and other communes in the north and west of Santiago. It is the city's most recent migrant cuisine and is still found more in grocers, canteens and neighborhood places than in restaurants with a menu.
Griot —pork marinated in sour orange and fried—, rice with black beans (diri ak pwa) and smashed fried plantain (bannann peze) are its everyday dishes, served with pikliz, a spicy pickled cabbage. Citrus, heat and rice tie it to the Caribbean and set it apart from everything else eaten in Santiago.
