It shaped Chilean baking and pastry long before restaurant menus. Today it's found as bistro and boulangerie in the heritage neighborhoods of downtown and in Providencia.
France shaped Santiago's table in the 19th and early 20th centuries more through influence than migration: well-off families hired French cooks, hotels and clubs cooked French-style, and Chilean pastry and baking adopted the puff pastry, crème pâtissière and bavarois that now seem native. The torta de mil hojas and the brazo de reina come from there.
Over the last twenty years that influence returned as bistros and boulangeries: butter croissants, quiches, crêpes, tarts and short market-cooking menus in Lastarria, Bellas Artes, Concha y Toro, Barrio Italia and Providencia. It is the cuisine of the long breakfast and the lingering lunch.
