More cultural influence than migration: neighborhood burger joints, Southern cooking and barbecue, with a brewery scene that grew strongly in the heritage neighborhoods.
American cuisine entered Santiago more as cultural influence than as migration: the fast-food chains arrived in the 1980s and 1990s, and with them the hamburger, boxed pizza and the hot dog lived alongside the Chilean completo. For decades that was the only visible face of the food of the United States in the city.
Over the last decade another appeared: neighborhood burger joints with sourced beef, slow-cooked Southern barbecue, Cajun and Tex-Mex cooking, and a craft-beer scene that grew strongly in Bellavista, Barrio Italia, Ñuñoa and Yungay. It is the cuisine of the casual night out, of brunch and of the game on the big screen.
