Meat rodizios and Bahian cooking, with much of the offer concentrated in Bellavista and Providencia. The caipirinha and pão de queijo are the most common way in.
Meat rodízios were the first face of Brazilian cuisine in Santiago, from the 1990s, and for a long time the only one. The Brazilian community grew from the 2000s with students, professionals and families, and with it came pão de queijo, açaí, Saturday feijoada and the Bahian cooking of moqueca and acarajé.
Bellavista and Providencia concentrate the most visible offer, among churrascarias, caipirinha bars and Brazilian cafés, but grocers with products from Brazil are now spread across the city. It is a cuisine of long tables and celebration, and in Santiago it is found mostly at night and on weekends.
