History

Arrival in Santiago

Southeast Asian cooking is the newest addition to Santiago's food map: the first Thai and Vietnamese restaurants opened over the last decade, often run by cooks who lived in the region or by newly arrived families. Barrio Italia, Bellavista and Providencia were their first neighborhoods.

Short menus, wok and broth cooking: pad thai, coconut-milk curries, pho, bánh mì and fresh rolls. They are small places for lunch and early dinner, working with fresh herbs and heat adjusted to the local palate, and taking this cuisine to more neighborhoods every year.
